If you’re looking for a very simple paleo chicken salad recipe, then you’ve come to the right place. And you know what…Not only will I teach you how to make paleo diet style chicken salad, I’m also going to give you the lowdown on how to prepare tasty homemade mayonnaise to go with the dish! The mayo is a must in my opinion.

Now, now… don’t you worry about the mayonnaise because the ingredients we’ll be using to make it have been approved by WPDC . That’s World Paleo Dieticians Committee. In other words, the paleo diet mayonnaise recipe that I’ll be sharing with you in a short while can be consumed by all paleo diet practitioners.

Alright, let’s not delay any further. Let’s us proceed to the recipe directions! Oh by the way, there’s no such thing as World Paleo Dieticians Committee (WPDC). I made that up because it sounds pretty cool.

Ingredients for the Paleo Chicken Salad Recipe…

In order to make this simple, delicious paleo chicken salad, you’re gonna need 2 cups of cooked diced chicken, 2 teaspoons of honey, 2 teaspoons of lime juice, 1 cup of finely chopped celery, half a cup walnuts chopped, a bit of pepper to taste, and 1 large tart apple which has to be cored and diced.

Like I said earlier, mayonnaise is required for this paleo chicken salad recipe. You’re gonna need about ¼ cup of paleo diet mayonnaise, so now I’ll tell you how to prepare it.

Recipe for Paleo Diet Mayonnaise

Mayonnaise Ingredients:

Half cup of olive oil, 1 whole egg, ¼ teaspoon of dry mustard, 1 tablespoon of lemon juice

How to prepare:

Dump everything but the olive oil in a blender. Blend about 5 seconds. Next, blend some more but this time pour olive oil into the mixture in a gradual manner. Keep on blending until the mixture becomes thick.  Finally, remove mix from blender into a snap lock container. Put container in the fridge and you’re set!

Okay now let’s get back to the chicken salad…Once you have the ingredients in order, follow the instructions below…

Instructions for Making Paleo Chicken Salad…

1) Grab a bowl and toss in the tart apple, walnuts, celery, and diced chicken. Combine well.

2) Grab another bowl, a smaller one this time, and put in the paleo mayo, honey, and lime juice. Mix them properly.

3)  Add the dressing to the chicken salad. Finally toss the mixture thoroughly so that the chicken gets coated well.

4) Eat then go to sleep.
