Paleo Vegetable Recipes

 

I made a couple of paleo vegetable recipes recently and they were wonderful! Highly flavorful and good to the last bite. I’m pleased with how the recipes turned out so I thought I should share them with you. You know, it’s pretty easy to make terrific tasting paleo vegetarian recipes if you have a couple of solid cookbooks at your disposal.

Now, keep in mind that the recipes in the above cookbook are not 100% vegetarian. Sure, they are plenty of veggie recipes in the book but it doesn’t focus exclusively on paleo diet vegetables. Instead, it has a bit of everything including seafood, poultry, soup, breakfast dessert and even paleo chili recipes.

Okay moving on to the recipes that I wanted to share with you. Here’s recipe #1 and it’s called…

Brussel Sprout and Bacon Medley

Paleo Vegetable Recipes

What you’ll need:

Freshly ground black pepper for flavor
1 ½ lbs of fresh Brussel Sprouts
5 slices of Bacon
1 cup of Chicken Stock
Freshly ground black pepper for flavor
1 Freshly chopped Onion

Method:

Step 1: Cook bacon in a skillet over medium heat. Make sure you cook the five bacon slices until they’re brown and crisp. It should take about 8 to 10 minutes to cook each side of the bacon.

Step 2: Remove bacon slices and pat dry thoroughly, but don’t discard the remaining fat (derived from the bacon) in the skillet. We’ll need it for the next step. Once dry, cut the bacon slices into smaller pieces, approximately ¼ inch in size.

Step 3: Heat the remaining fat and toss in chopped onion into the skillet. Cook them for about 2 to 3 minutes.

Step 4: Throw in the fresh Brussel sprouts and cook until they’re slightly soft. Once you add in the sprouts, make sure you stir them properly. We want them to mix well with the chopped onion.

Step 5: Pour chicken stock into the mix. Wait for the stock to boil then lower the heat to allow it to simmer down. Cover the skillet and let the mix continue to simmer for about 10 minutes.

Step 6: Once the mix are fully cooked, drain excess liquid and place everything on a plate. Okay let’s eat!

You know, my cousin said that this particular dish is…

“One of the greatest paleo vegetable recipes ever!”

I think that’s a bit over the top, but it’s a decent tasting dish nonetheless.

Okay here’s recipe #2:

Grilled Paleo Diet Vegetables

Note: This one is perfect for people searching for pure paleo vegetarian recipes. The following recipe doesn’t require bacon slices like the previous one. Okay, here goes…

What you’ll need:

4 Tablespoons of chopped Oregano
2 Fresh Onions cut into rings
3 Japanese Eggplants, cut them into a dozen slices
2 Orange Peppers cut into 4 slices
2 Yellow Peppers also cut into 4 slices
3 Zucchinis, halved
1 Cup of Olive Oil
A bit of Pepper for flavor

Method:

Step 1: Place all vegetables on a plate and season them with pepper, chopped oregano and olive oil.

Step 2: Store in the fridge and allow the paleo diet vegetables to marinate for an hour or two.

Step 3: Heat a grill pan over medium heat. Drain excess marinade and then place the veggies on the grill pan. Grill both sides until brown and tender on both sides. 5 minutes per side should do it and don’t forget to use long tongs when grilling the vegetables. Enjoy!
